Langham Hotel’s Afternoon Tea Hits High Note - World Cocoa Search leads to Aria


Melbourne, Australia, 2010 - The Langham, Melbourne’s Head Pastry Chef, Markus Bohm, is a chocolate maestro. Together with Executive Chef Anthony Ross, he has searched the globe for the finest cocoas to create his favourite dishes, which feature in The Chocolate Bar. This new, dark and decadent high tea experience is available every Saturday and Sunday afternoon from 1pm until 4pm, at The Langham, Melbourne’s elegant ARIA Lounge.

The Chocolate Bar, which features intricate chocolate creations crafted from cocoas from as far afield as Yucatan, Costa Rica and Madagascar, is a sweet-tooth’s ultimate world tour – except that they don’t have to leave Melbourne’s riverside Southbank precinct.

“The product of the cocoa tree has been seducing fans for centuries,” says German-born and trained Chef Bohm. “Having worked throughout Europe, the Caribbean, the United States and now in Australia, I can assure you that very few people in this world can resist chocolate in some form or another. We have created The Chocolate Bar as a divine celebration of this global treasure.”

For ARIA’s afternoon guests, the tricky part will be deciding where to begin their chocolate journey…or perhaps when to finish.

Exotic South America may prove an alluring starting point; say a flourless chocolate cupcake topped with Costa Rican cocoa ganache, a shot glass of delicately layered white and dark chocolate mousse featuring cocoa from Ecuador, or perhaps a sliver of the stunning Lady Mogador Mousse Cake, made with dark Venezuelan cocoa and topped with passionfruit glaze. Then again, The Chocolate Bar’s European offerings, including brandy chocolate bon bons topped with fresh raspberries or the signature Langham Torte – a true indulgence with almond marzipan, cherries, brandy and Valrhona chocolate – may prove an ideal launching point.

While sourced from a plethora of international cocoa plantations, all of the chocolate featured at The Chocolate Bar has been blended and processed by the world’s finest chocolate houses. ARIA Lounge’s luscious weekend line-up includes products from Lindt & Sprüngli, Callebaut, Belcolade, Valrhona, Cacao Berry, DGF Royal and Australia’s very own Haigh’s.

Beyond the allure of dark delights, the Langham’s Anthony Ross and Markus Bohm have put together fresh fruit skewers, to be enjoyed natural or with a drizzle from the Lindt chocolate fountain, miniature berry tartlets and airy, cooked-to-order soufflés – just the thing to complement an afternoon cuppa. Of course, no high tea would be complete without hot fluffy scones with jam and cream, or a stand of elegant savouries such as classic smoked salmon and cucumber finger sandwiches, open face sandwiches topped with King Island brie and smoked ham, or classic chicken and avocado.
