The Langham, Melbourne’s Melba restaurant is named after Dame Nellie Melba, Melbourne’s famous opera singer of the early 1900s. It underwent a dynamic multi-million dollar refit by the Buchan group in 2006, emerging with a vibrant, state-of-the-art layout. A series of open, interactive kitchens and cooking stations where guests can communicate with the chefs was created, offering guests a diverse range of international and local culinary cuisines.

Today, guests can indulge in delicacies from the Asian wok and dumpling section, the Indian Tandoori oven and spice kitchen, the rotisserie, the extensive chilled seafood section (displayed on freestanding backlit marbelo ice block stands) and the sushi station – Melba’s latest addition. A decadent “Floating Dessert” display will also tempt guests with its array of sweet treats.

Melba’s menu caters for a wide variety of tastes and is a showcase for premium Victorian produce and local wines.

ARIA Bar & Lounge

Aria is a sophisticated, elegant lounge experience, and is nestled discretely on the podium level. With views of the water feature and grand staircase, it is the perfect vantage point for social theatre and people watching, while the distinctive steel and bronze lace screens offering private seating enclaves.

The luxuriously appointed lounge features a long central bar and leather and velvet upholstery, and is the perfect venue for meetings or intimate gatherings. Aria offers an extensive selection of teas, coffees and light meals throughout the day – the highlight being the signature Langham Tiffin experience on weekdays, and the decadent Langham Chocolate Bar on weekends.

As day turns to dusk, classic cocktails and premium Champagnes are served, alongside fine artisan wines from the Yarra Valley.
