Darren Purchese is one of Australia’s most respected pastry chefs, creating whimsical and striking desserts with unexpected flavour combinations and avant-garde patisserie techniques. Prior to starting up the Burch & Purchese Sweet Studio, Darren worked with Shannon Bennett at Vue de Monde, as well as in the pastry sections of Fenix, The Press Club, and Bennelong restaurant at Sydney’s Opera House.
